Ingredients

300ml creme fraiche

100g mature cheddar, finely grated

3 egg yolks

1 pack of streaky honey cured bacon (or what ever type you have to hand) approx 300g

350g pasta. I used tagliatelle but use what ever you fancy!
Method

Place a pan of water on to simmer.

In a second pan empty the creme fraiche, egg yolks and finely grated cheese and whisk to combine to a smooth mixture. Salt and pepper to taste.

Pop your pasta in the simmering water and cook as per the product instructions.

Place the cured bacon under a grill and cook till crispy. Remove and Keep warm.

Place the cheese mixture on a low heat and gradually heat through, stirring until smooth and glossy. If you like you sauce thinner then add a couple of tablespoons of the pasta water to this once ready, and stir in.

Drain the pasta once cooked and add the creamy sauce and stir well.

Divide into dished and top with the bacon. Serve immediately!
